Beef Soup

Course: Main Dish
Author: Toni Anderson

Ingredients

  • 2 cups leftover pot roast - cubed
  • 3 potatoes peeled and cubed
  • frozen peas
  • frozen corn
  • frozen carrots
  • 1 can mushroom gravy
  • minced onions you could use the real stuff if you have it
  • salt pepper, garlic to taste
  • beef broth - enough to make it look like a soup

Instructions

  • Dump everything in a crock pot.
  • Cook on high for 4 hours.
  • Pour soup into bowls and serve.

Bread Bowls

If you want to make this soup suitable for company serve it in bread bowls. Looks cool and less dishes. To make bread bowls use your favorite bread recipe, I use my basic whole wheat bread.

Instead of shaping into loaves after the first rise, make softball sized rolls. (Make them smaller or larger depending on the appetite of those who are eating). Cover and let rise for about 40 minutes then bake for 20 minutes at 350 degrees.

After the rolls are finished, slice off the top and scoop out the middle. Personally I eat all the middles, but if you are a better hostess than I, cube it and serve with the soup.

The best thing about this meal is that it is almost free. Everything except the bread bowls (under $1), spices and mushroom soup were leftover from another meal! The total cost of this meal is around $2 for 8 servings! That breaks down to $0.25 a serving.

Delicious, healthy, balanced and super cheap!

I had never thought about freezing my leftover veggies. I really need to start doing this because we waste way too many leftovers in our house. The recipe sounds really yummy and easy too.

I am on a sourdough kick, so will have to try the bowls when I get tired of eating the bread right out of the oven – which will happen some day – won’t it??? Thanks for the idea!

Thanks for your great tips, as usual you present ideas that can really work for everyone! I have been making bread for about a year now thanks to your encouragement. I so appreciate your inspiration as my family has been struggling this past year and more bad news on the job front makes it look even bleeker for now. I am so thankful to have found your blog last year and to have benefited from many great money saving ideas! Best wishes to all for the coming year, I know we can make it!!

This sounds amazing! I’ve never done soup in bread bowls, but I’m sure my kids would gobble it up. 😀 Should have done it tonight as we had soup, but there will be much soup coming with these cold winter months.

Love this recipe. Quick question. Is it mushroom soup or gravy?

Mushroom gravy, you could probably use beef gravy, or omit it. I added it because the gravy had been in my pantry a long time!

I was wondering if you know how to take your bread recipe and make it gluten free?

This was such a great idea. I am making it with turkey and everything in pantry, fridge, and freezer. I was trying to think of what to do with my leftover turkey and now I have Turkey Soup in the crock pot and bread dough in the bread machine. I really love your blog!
